Ginger Honey Switchel
Switchel is a tasty way to get your daily dose of apple cider vinegar. If you aren't a fan yet but want to reap the benefits, try with a small amount of apple cider vinegar and add a little more each time you make it.
It's a good idea to have a little ginger every day too: it contains antioxidants, along with antimicrobial properties that can help fight infections. And if you do happen to get sick, ginger is an anti-inflammatory that can help with the pain. Yes, it's a pretty impressive little spice!

Directions
1) Heat the filtered water in a saucepan.
2) Wash, peel, and slice the ginger. I like to use a potato peeler to remove as much of the outer layer as possible but don't worry about peeling the ginger completely.
3) When the water is boiling, add the ginger.
4) Remove the pan from the heat and let the ginger water steep for about 20 minutes.
4) Using a fine mesh sieve, strain the liquid into a large bowl. Discard the ginger.
5) Add the lemon juice, honey, and apple cider vinegar. Don't add the honey when the water is too hot, or it will cook and no longer be raw.
5) Pour the liquid into a glass container.
6) Cool and store in the refrigerator.
