Chia Pudding
Who would've thought those annoying little seeds were so amazingly good for us! But not only are they full of nutrients, antioxidants, fiber, protein, and those sought-after omega 3 fatty acids... they are also low in calories and make the most delicious no-bake desserts too! There is a basic ratio of 3 tablespoons of chia seeds to 1 cup of liquid. Add about a tablespoon of sweetener (I like maple syrup the best), shake it all together, and cha-ching - you have a tapioca-like pudding!
Directions
1) Pour the milk into a large mason jar. Add the chia seeds, maple syrup, and vanilla extract. Secure the lid on the jar and shake the ingredients together.
2) Thoroughly wash and dry the lemon. Using a zester or very fine grater, remove as much of the outer rind as you can. Stir this into the mason jar too.
3) Cover the mason and shake vigorously. Refrigerate for a couple of hours (or overnight) but remember to shake the jar a couple of times so it sets evenly.
4) When it has set to a pudding, add fruit, nuts, or any other combo that sounds good to you!
