Mango and Ginger Smoothie
This is my absolute favorite smoothie. It's brimming with anti-aging, disease-fighting ingredients. The only thing missing is something green — so feel free to throw in a generous handful of spinach. (I love the golden color, so I eat veggies later in the day.)
1 cup frozen mangoes
2 tablespoons Greek yogurt
1 tablespoon Peanut butter
2 Medjool dates, pitted (be sure to remove any hard stems too)
Fresh ginger, peeled and sliced (I love ginger, so I use about an inch.)
1 - 2 scoops unflavored collagen powder (I like Vital Proteins.)
1/4 cup of milk, or enough to almost cover the other ingredients (I use oat milk in my smoothies.)
Add everything to a high-speed blender.

The Perks of coffee - and how it changed my life!
I will always remember my first latte: it was at a waterfront coffee shop in Scottsdale, Arizona. For some inexplicable reason, I had let fifty plus years of my life slip by without having a single cup of coffee. But after savoring just a few sips of this new and delectable concoction I was in awe — this wasn't just a beverage; it was an experience!
