While digging around inside my fridge one night, I came across a bag of organic baby carrots that I had completely forgotten about. Instead of throwing them away, I decided to add them to my smoothie for some extra nutrition. The next day I was looking for other ways to use them up and came across a recipe for carrot fries. These turned out to be so delicious that I had to write a blog about them!
As a child, you were probably encouraged to eat your carrots, with the exciting promise that you would be able to see in the dark. Unfortunately, this turned out to be a myth perpetuated by the British Air Ministry during World War II to keep their newly developed interception radar a secret from the Germans.
The moral here is always try to meet your nutritional needs from food and not just from taking a pill - science simply cannot compete when it comes to what nature has to offer.
Recipe for quick carrot fries
Organic baby carrots
About a tablespoon of avocado or olive oil
Pinch of salt (Celtic or Himalayan)
Heat oven to 400 degrees.
Rinse carrots and blot well with a paper towel to remove excess moisture.
Add the oil and salt to a large bowl and toss the carrots in the oil.
Bake for about 30 minutes or until the carrots start to caramelize.
